After a year of fermentation, the food science nerds at CHC Sauce and Spice finally have their next batch of "soy" sauce and miso. Only this time, the batch is made with native plants (tepary beans and sunchokes). Oklahoma Mixer bean sauce and paste will debut on Saturday, Mar. 7th 2026. The Oklahoma Mixer "soy" sauce is available in 250 mL bottles. Meanwhile, two grades of Oklahoma Mixer "miso" bean paste are available. The standard variety is a frozen block of miso ready for any occasion, including stir fried vegetables. The premium variety is the ultra-fine paste, perfect for fancy miso soups. Both come in 6 oz. portions.
We have to be careful to put quotation marks around "soy" sauce and "miso," since no soy is used in our products. The sauce and paste are made using protein-rich tepary beans and the starchy tubers of the sunchokes. Everything here was cultivated in our garden. We are even conducting a program of artificial selection to create a cultivar of tepary beans which grow best in our particular environment. These products are absolutely sustainable, and the local fauna love the fact that our garden is full of native plants for them to enjoy.
Since this first batch is experimental, we only made a small amount. Due to the popularlity of our previous soy sauce offering to the public, we suspect that we will sell out very quickly. Come early to the Norman Farm Market to get yours. Of course, you can always reach out to us to reserve some!
