This is our epicurean eisel sweet potato vinegar. The name says it all: this is a culinary (epicurean) vinegar (eisel is an archaic english word for vinegar). This is a tasty twist on the vinegar you thought you knew. "Now hold up" you say, "did you just say sweet potato?" You bet your bottom dollar I did. I will be honest with you, I don't really like sweet potatoes that much. While they grow well in the Oklahoma soil, this chef grew up with Oklahoma Thanksgivings where sweet potatoes were served with marshmallows, and I never learned to enjoy them. I mean, sure, you can deep fry them, but why bother when regular potatoes are even better?

Faced with a small mountain of sweet potatoes when I came home, I decided to do what I always do with an abundance: make some wine. The wine was okay at best, and I can't sell that yet. Instead, I decided to experiment with vinegar production. It turns out this was a fantastic decision. I love this stuff. Sweet potato vinegar is an excellent alcohol-free replacement for white wines in cooking. The flavor profile is complex and pleasant, and it pairs well with many American dishes. When I decided to dive into my Julia Child cookbook, nothing can replace a quality chardonnay for a fricassee, but I can put a much more American spin on that with by replacing the white wine with Epicurean Eisel sweet potato vinegar. Add a little smoked paprika, and I can get something wild going.
