Here at CHC, we have been fermenting things for years. One product which is in our personal refrigerator 24/7 is kombucha. Our SCOBY has been producing delicious 'buche for years, and we can trace the lineage back over a decade before we started CHC. We use a continuous-batch process, dispensing fermented kombucha weekly before adding more tea to the tank. After the initial fermentation, we like to do a second round of fermentation in pressure-safe bottles to produce a lightly carbonated end results. Typically, we use pineapple juice to flavor the second round fermentation, but we sometimes use other fruits and flavors in the mix. Typically, people tell us that our kombucha is much better than the stuff you get at the store. We control the time and temperature of our fermentation to ensure that the end result is just right. Since our bottles don't sit in warehouses prior to sales like storebought brands, the live kombucha stays a little sweeter than you might get elsewhere. Estimated Shelf Life

Refrigerator: 7–10 days when bottled. Do not leave in warm conditions unless you know what you are doing. This is a live culture and it can create intense pressure. Be careful when opening.
