One day in 2024, we decided that we should make our own soy sauce. Heck, we used enough that it made sense and we had loads of experience with fermentation. It turns out that this was the correct decision. Our soy sauce floored us with how tasty it was. We actually started CHC as a way to share this amazing flavor with the world.

Named for the storms in Oklahoma, our Lightning Soy Sauce (閃電醬油) is a Japanese white soy sauce (白醬油; しろしょうゆ; shiro shoyuu) we ferment for 9+ months using a 50/50 mixture of soybeans and wheat pulled from fresh harvest batches. This white soy sauce comes out as a light tan, and we age the sauce in the sun for several months to darken it slightly through UV reactions. After a year of daily stirring, the result is one of the best soy sauces we have ever tasted. While storebought soy sauce often has a very simple flavor profile (salt + umami), ours does all that and more. The high wheat content causes carmelization flavors to blossom forth. To quote an early adopter: "toast, butter, cinnamon honey." Our soy sauce is a little less salty, too. Industrial soy sauce like you might buy at the store neutralizes HCl from the digestion process with NaHCO3, creating a very salty (NaCl) end product. Since our process is purely fermentation, we control the brine concentration and keep the salt content to a minimum safe level (15%).

This stuff is seriously tasty. Words fail to do it justice. We have heard reports of some folks taking to sipping it from the bottle. This is small batch sauce, and it sells out quickly. We have to be careful not to sell to much, since we use this as part of our other recipes like our Spring Rolls.
