This Miso Creamed Butter is a ready-to-use version of our fermented Thunder Miso. Literally, this is mixture 1:8 ratio of miso in butter by volume. That's it. We cream the butter using Julia Child's method (see Mastering The Art of French Cooking Vol. 1, Buerre en Pommade section, pg. 100). The result is a fluffy, whipped spread that is great as a finisher for cooked fish and even as a sandwhich spread. The miso is light and tangy, adding some extra umami zing to the final product. Alternatively, you can use this as a middle step in a more ambitious recipe: use it in place of butter for fried mushrooms or as a base for beurre blanc with a little white wine and shallots.
