This is our Back to the Rind Gumdrop Sweet watermelon candy. This is texture variation of our Classic Chew dehydrated fruit. By altering the salt-sugar-dehydration process chain, we achieved a candy with the same sweetness as the Classic Chew but with a texture closer to a gumdrop. You can really sink your teeth into this one.
Who said you just had to throw away the rind of a watermelon? When we peel the green exterior of the melon and use the interior for something else (coming soon), we are left with the hard white rind. This is salted to retain the structure, then we replace the salt with sugar through a multi-step process. We dry the rind in our dehydrator until the texture is just right. Finally, we cover the dried fruit in a sugary coating to get a dusting of sweetness.
