This is our epicurean eisel pineapple kombucha vinegar. The name says it all: this is a culinary (epicurean) vinegar (eisel is an archaic english word for vinegar). This is a tasty twist on the vinegar you thought you knew. Our pineapple kombucha flavor is a tropical and fruity vinegar. What is the difference between kombucha vinegar, kombucha, and vinegar? The simple answer is tea. The complicated answer is biology. We start our kombucha vinegar the same way as we start our Jellyfish Juice kombucha, with a sweetened assam black tea fermenting with a SCOBY. The SCOBY converts sugar to alcohol while simultaneously converting alcohol to acetic acid (vinegar) in a single-step process. Traditional vinegar is produced by producing a wine in the first step, then introducing the microbial culture to convert the alcohol to vinegar in a second step. A similar reaction happens with the caffeine and tannins in the kombucha tea into more complex acids. The result is a vinegar with a more complex flavor profile, which may be just what you are looking for.
