CHC's Thunder Miso is the partner of our similarly named Lightning Soy Sauce. This is a Japanese white miso we ferment for 9+ months using a 50/50 mixture of soybeans and wheat pulled from fresh harvest batches. After pressing out the soy sauce, we pack the miso into little blocks for storage. The end result is a little more "raw" tasting than the soy sauce, and it offers fresh potential in many dishes.

Around the house, we use Thunder Miso in classic miso soup, stir fried vegetables, and salad dressing. We include recipes for a few things on the back of the packaging. Since our miso uses whole wheat instead of processed wheat, the end product is much more substantial. This helps it work great as a breading for meats and vegetables. When we cook this in a stir fry, the miso clumps and sticks to vegetables like zucchini to make crispy, savory morsels that enhance the flavor a thousandfold as it cooks.

Miso (味噌; みそ) is the co-product of fermentation alongside soy sauce. Other east Asian cultures have similar fermented bean pasts, including the Chinese jiang (醬), Korean doenjang (된장), Thai tao jiew (เต้าเจี้ยว), and so on. After soybeans ferment, they are pressed to extract the liquid soy sauce from the solid bean paste. Westerners are becoming more aware of miso through famous dishes like miso soup, but there are a plethora of uses for miso.
